8 oz Ravioli
4 oz Heavy Cream
1.5 TB Olive oil
2 cloves garlic (sliced)
1 TB butter
2 TB lemon juice
1 TB parsley (minced)
Salt & Pepper to desired taste
1.) Place a large-sized saucepan on medium-low heat, and add your olive oil.
2.) Add your sliced garlic and a small pinch of salt. Saute lightly while constantly moving the garlic, not allowing it to brown. At this time drop your ravioli into a separate pan of boiling water on a 3-minute timer.
3.) Add your heavy cream into the saucepan and return to a light simmer on medium heat for about 2 mins. Add another pinch of salt and a crack of black pepper.
4.) Once the sauce reaches a simmer, add your ravioli to the saucepan with butter. The key to an emulsified sauce is to continuously shake the saucepan not allowing any pasta to stick to the bottom. Add a splash or two of pasta water if the sauce tightens too much. After about 1 minute of shaking the pan, you are done.
5.) Finish with your lemon juice and parsley.
6.) Plate and top with fresh parmesan.
